The Art of Matcha
Jingshan Matcha and Japanese Matcha share a common heritage rooted in the whisked tea culture of China's Song Dynasty. During the Southern Song period, Jingshan Temple in Hangzhou, Zhejiang, became a renowned center of tea and Zen culture. Japanese monks studied there and brought the traditions of whisked tea back to Japan.
The Craft: Traditional Stone Grinding
The final transformation is a slow, rhythmic ritual. Our Tencha leaves are ground into fine silk using traditional granite stone mills (Ishi-usu).
To prevent friction-heat from altering the delicate flavor and aroma, each mill rotates slowly, producing only 30 grams of matcha per hour. It is a commitment to quality over velocity—a testament to our philosophy of unhurried perfection.
